Porcini Mushroom Broth

INGREDIENTS:
2 lb. porcini mushrooms, substitute: shiitake/cremini (brown) reserve 2 pieces for steeping
3 stalks celery, quartered
1 spanish onion, quartered
2 cloves garlic, whole, crushed
1/2 bunch scallions, green tops only
1/4 tsp (~20 pcs) black peppercorn
1/8 tsp (~10 pcs) coriander, whole
6 pcs parsley stems
4 thyme sprigs (1 for steeping)
3 pieces chive (for steeping)
1/4 lemon (for steeping)
1 Tbsp. Kosher salt
To Season:
Sherry Vinegar - to taste
Kosher Salt - to taste
Mushroom Powder (optional) - to taste
DIRECTIONS:
Preheat oven to 450 degrees Fahrenheit.
Wash mushrooms under cold water to remove any excess dirt, a brief soak will help rid mushrooms that are particularly dirty. Dry with toweling then place in a large mixing bowl.
Before proceeding, remove 2 mushrooms from the bowl, slice thinly, and set aside for steeping.
Add onion, garlic, thyme, and a large pinch of kosher salt to the mushrooms in the bowl. Toss to evenly coat.
Place mushrooms/onions/garlic/thyme on parchment lined baking sheet and roast in oven for 10 minutes. Just until onions start to blacken and mushrooms begin to release some liquids.
6. After roasting, add mushrooms (along with their liquids, onion, garlic, and thyme) to a large pot.
7. Add celery, scallions, peppercorn, coriander, parsley stems, 3 thyme sprigs, and kosher salt to pot. Then add 1.5 quarts cold water.
8. Place pot over low heat and bring to a slow simmer. Allow to simmer for 1 hour, remove from heat and strain.
9. Add steeping ingredients (sliced raw mushrooms, 1 thyme sprig, chive, lemon) to hot broth and allow to steep for 15 minutes.
10. Strain steeping ingredients and season broth. Start with 1/2 tsp sherry vinegar, a pinch of salt, and a pinch of mushroom powder (if desired). Taste your broth to evaluate the level of salt and acid, and adjust to your liking.
11. Serve broth as is, or use as an awesome base for soups, sauces, or anything calling for vegetable stock for an awesome mushroom flavor profile.
