Apple Brie Tart with Almonds and Watercress

YIELD: 1 Tart (9” x 11”) About 8 slices, Serves 2

PREP TIME: 30 minutes

INGREDIENTS:

  • 4 Apples, cut into 1/4-inch-thick slices, any kind of apples you have on hand!

  • All-Purpose Flour, for dusting

  • 8 ounces Puff Pastry (1 sheet of a 17.3 oz package) 

  • 6 ounces Brie cheese, sliced 1/4 inch thick

  • Red Onion, sliced thin, about 20 slices (1/4 onion)

  • 1 Cup Watercress, dressed lightly with vinegar and oil

  • 1/4 Cup Almonds, sliced or crushed, toasted

  • 1 tsp Extra Virgin Olive Oil

  • 1 tsp Kosher Salt

  • 1 Cup Jelly, or jam, any kind you like works great 

 

DIRECTIONS:

 

1. Preheat the oven to 400 degrees Fahrenheit, with the rack positioned in the center. Lay a sheet of parchment paper on the countertop, then lightly dust it with flour. Roll out puff pastry dough to a 9 inch by 11 inch rectangle, with the dough being 1/8inch thick.

2. Place dough and parchment on a baking sheet and set in the refrigerator for 15 minutes.        

3. Slice apples, season with salt and jelly and set aside. 

4. Remove puff pastry from the fridge, and score edges, creating a 1” thick border. Drizzle Olive Oil over the inside border of the tart, inside the border you cut. 

5. Next, arrange cheese, apples, and red onion on top. Season with salt, and olive oil. Bake for 15 minutes. 

6. Reduce the temperature of the oven to 350 degrees and bake for an additional 30 minutes, or until golden brown and cooked through.

7.Sprinkle almonds and dressed greens atop the tart, slice, and serve.
